Welcome to the Red Umbrella Coffee Roaster! The Roasting House regular hours are Monday, Tuesday & Wednesday from 3pm to 6pmlocatedat 2119 Jade St., Mora MN 55051. Also, if I’m roasting or baking I’m open for business – If the GREEN PORCH LIGHT IS ON THE ROASTING HOUSE IS OPEN.

The coffee beans I sell are roasted in small 2 liter batches. I roast about once a month to insure that the coffee beans I offer are fresh and have the ability to provide you with a delightful cup of coffee. You may purchased the coffee beans whole or ground to your preference. If you’re not able to visit the Roasting House during regular business hours contact me and we’ll see what we can arrange – Simply text or call 612-390-4830 To ensure I’m offering you the freshest coffee beans possible I do not roast large batches nor do I store a large quantity of roasted coffee beans. THE FIRST THURSDAY OF THE MONTH MILACA DELIVERY Starting Thursday, April 4th thru August 1st, 2024 I will be at BLU TANSI Floral, 150 2ND AVE, SW, MILACA MN 56353, 320-982-0259 from 3:00 – 5:30 pm Carla, with Blu Tansi Floral, has so graciously offered me the opportunity to provide a once monthly Milaca pick-up spot for Red Umbrella Coffee Roaster customers. Contact me at 612-390-4830, or redumbrellacoffeeroaster@gmail.com, to place your order and I will email you an invoice. Online ordering hasn’t worked well as I have limited quantities of roasted beans in order to offer my customers the freshest coffee beans possible. Contact me for available coffee beans and I will grind fresh Thursday morning for that afternoon’s pick-up. I will bring along a few bags of whole coffee beans for those who have their own grinders. If there are no pre-orders I will not be at Blu Tansi for that date. Please check Red Umbrella Coffee Roaster on Instagram on the first Thursday of the month to verify if there will be a delivery that day. And, while you’re at Blu Tansi check out the beautiful floral arrangements they have available. You might find a gorgeous floral arrangement to accompany the fabulous coffee beans you pick up.

Coffees Beans, Breads & Cookies


Fair Trade, Farm Gate or Organic green coffee beans roasted fresh. Your choice of grind or whole bean. No preservatives, flavorings or coloring added.

Ciabatta is available in One or Two-Pound loaves. Red Umbrella Coffee Roaster now offers Ciabatta made from hand-ground organic Non-GMO white wheat berries. Some studies have stated that highly processed flour is more difficult for our digestive systems to process. Hand-ground flour should be easier for the human body to process without bloating.

Order your loaf/loaves, Regular or Hand-ground, by Monday afternoons for pick-up Wednesday afternoons.

Sourdough is currently not available.

No preservatives used in any baked item.

I try to bake extras from the orders received and will post on Instagram what breads and cookies will be available and when.

Plain or Almond Biscotti and Sugar Cookies. Available by the dozen or half-dozen. No preservatives used in any baked item.

“Thank you Red Umbrella Coffee!”

Oh! Red Umbrella! You have a gem in the Zen Morning Blend!   We use a percolator that gets the water very hot, so I let my cup sit for a minute, right away I could smell the layers of chocolate and sweet fruit.  This coffee is smooth, a pleasure to sip, It definitely has my attention and I feel like I’ve treated myself well this morning.  This Zen Blend is a light-medium roast that has a mocha finish that is delightful!

Hi, I am Mikki Schafer, DBA Red Umbrella Coffee Roaster, a registered MN Cottage Food Producer. I roast and bake in a separate building located at my residence. MN Cottage Food Producer restrictions do not allow for operation as a coffee shop. No food or beverages are crafted and sold for on site for immediate consumption, other than 3 oz or less samples. All products will be sold directly by me and delivered in person. Restriction do not allow for sales outside of MN nor can I mail products in lieu of personal delivery. How I Became a Coffee Snob

Coffee never interested me during my younger years. My parents drank coffee often and as I got a little older, I was taught how to make drip coffee (Pour Over), but never drank it myself. I had been told that drinking coffee was an ‘acquired taste’ and I had no desire to acquire a taste for that stuff. Fast-forward 25 years. A dear friend took me to an independently own coffee shop and bought me a cappuccino. My taste buds exploded, I was enjoying a cup of coffee! I continued trying different coffees at different places and disappointment was the only thing I found in those cups. I went back to the little Coffee Shop and asked why their coffee was so much better – they used fresh roasted beans that they ground the day they were to be used. I started buying freshly roasted beans and grinding as I used them. I liked what I was drinking at home and refused to force my taste buds to navigate swill that was served at typical restaurants, cafes or fast food settings. I then decided to explore better beans and methods of brewing. I then learned to roast. Oh my, what a difference! I now splurge on fabulous beans and savor every sip. Good coffee is definitely good! I will drink coffee made many ways: espresso, cappuccino, latte, drip, stove top espresso, flip-drip, Keurig (with my own ground coffee), cold press and french press. I will only drink one, maybe two cups of coffee a day so as far as I’m concerned that cup(s) better be the best I can make otherwise why am I drinking it. I don’t drink for the caffeine intake, I drink for the flavor and the emotional connection to my dearly departed parents. My ‘One Cup for the Day’ is a pleasure to consume and provides me with 10-15 minutes of ‘me’ time to relax and just be. Now it’s time to share this lovely little life’s pleasure with others so I began custom roasting small batches of fair trade green coffee beans for others who desire the best.

Another treasure of my youth was fresh baked breads. My Mom used to love fresh baked breads and I also developed that love. When my children were younger I would bake fresh bread, by hand, weekly. Then I got a bread machine. I baked so many loaves in the bread machine that it wore out. Now I bake Artisan Breads by hand and love the process. The long (24 hour rise time) develops flavor in the Artisan breads that is hard to beat. The lofty air pockets in the bread gently embrace the cheese when used for grilled cheese sandwiches, or they help gather the butter, or peanut butter & jelly for that mouth watering taste of my youth.

Biscotti loving is a trait I developed as an adult. Again, I have searched out the best and have found some amazing recipes that have never failed to deliver superior flavor and texture. I am still searching for a chocolate that meets my standards to dip them in. Until I do, I only sell plain and almond biscotti as I won’t sell something that I don’t believe is fabulous.
